on the range {week 10}: easy stir-fry

{On the Range} is my weekly series where I discuss what we're doing, reading, and eating. It's a little bit 52 project and other photo projects, and a little bit {Did you Read?} and {In the Ranger Kitchen}.

Milestones

  • The dentist reported that Vivi has not one but two (!!) loose teeth. They could take up to a year to fall out, but the harbinger of a big kindergarten kid is upon us, and I admit to being a little weepy at the prospect of gap-toothed smiles. Who stole my baby?


My week

  • I can't stop myself from receiving Charlie's adorably slobbery smooches, so it's no wonder I finally succumbed to her hella-cold. Luckily for me the cold is mostly showing itself in exhaustion, which I can play off like it's any other day in suburbia. 


Moods

  • I'm humbled by the amount of grace my kids offer me when I'm sick. I hope I repay the favor as well as they give it to me, but I wonder sometimes if they aren't teaching me about love and generosity of spirit instead of the other way around.
  • Ummm, anyone catch my less-than-poetic diatribe on the facebook a few days ago? No? Probably for the best. The gist is that I'm moody about all the judginess (not a word, Blogger? Says who?) I see around me lately. Watch out, internet trolls. I've got my eye on you. 


Media

  • Nora Ephron's final act, written by her son Jacob. I'm grateful to have one last window into her life. What a lady.
  • The Onion's hilarious and apt portrayal of adorable Bostonians being adorable.
  • Design Mom's billet-doux to her husband on his 40th birthday is a wonderful reminder to see the good in our spouses. I also loved their most recent episode of Olive Us, entitled "How to be Two."
  • Suburban Matron's concoction for sick days that she named "hot ham water" as a nod to Arrested Development. I stick with TJ's "well rested" tea, but I'm stealing that term for it. Hilarious.
  • Ha! This McSweeney's is eerily and hilariously accurate of most spousal conversations in our home (minus the break-up).
  • Turns out that in high doses, sugar is toxic--probably no better for the body than corn syrup. AND p.s. saturated fat is not toxic


Meals


Here's what my CSA farmer has to say about her stir-fry recipe: "The marinade is the key to this recipe. It works well with beef, pork or chicken, but the interplay between the beef and the ginger makes it especially well suited to our beef cuts. It is great for a variety of cuts including rump steak; tri-tips, flank steak. London broil, or sirloin. It is also a great way to combine orphan cuts into a fabulous meal!!"

easy stir-fry

Marinade:
3 Tbs. tamari soy sauce
2 Tbs. rice vinegar
2 cloves garlic, minced
2 tsp. fresh ginger root, grated
1 Tbs. sesame oil
2 tsp. sugar
¼ tsp. crushed red pepper flakes – more to taste

1 Tbs. high-heat oil for the pan (peanut, canola, coconut)
1 to 1.5 lbs meat, cut into think (see suggested cuts above)
variety of fresh seasonal or frozen veggies, e.g. onions, scallions, bell peppers, carrots, broccoli, bok choy, spinach, sugar snap peas etc….
1Tbs. cornstarch
1 Tbs. dry sherry

Combine all marinade ingredients in a bowl and add sliced steak tossing to coat. Let sit for at least 30 mins or up to two days in the fridge.

Heat a wok over high heat. Add the oil and then the meat with marinade. Cook meat, stirring frequently. As meat begins to cook, add the vegetables and continue to cook until veggies are crisp-tender. 

Combine cornstarch and sherry in a small cup and add to the wok, stirring until the sauce thickens and becomes glossy – about a minute. Serve over rice.
